Triterpenoid saponins are a diverse class of naturally occurring chemical compounds composed of a triterpene aglycone (a 30-carbon lipid-soluble skeleton) covalently linked to one or more hydrophilic sugar chains. This combination creates an amphiphilic structure, giving them soap-like surfactant properties, such as the ability to form stable foams in water.
